Ingredients (makes 18 sausage rolls)
- 300g venison
- 1 pork sausage
- 1 roll of puff pastry
- 1 egg
- Fresh thyme
- Salt & pepper
- Scotch Bonnet chilli jam
Method
Prepare the filling:
Mix the venison with the sausage meat, salt, and pepper in a bowl until fully combined. Chill in the fridge.
Shape the rolls:
Roll out the puff pastry. Place one-third of the meat mixture along one short edge and shape into an even log. Roll the pastry over the filling, press gently to seal, and cut away the excess pastry. Repeat to make three long rolls. Chill again.
Preheat the oven:
Set to 200°C (180°C Fan).
Cut and prepare:
Trim excess pastry and slice each long roll into six pieces (18 sausage rolls total). Arrange on a baking tray lined with baking paper. Brush with egg wash, sprinkle with salt, and garnish with thyme.
Bake:
Bake for 30 minutes, until golden and crisp. Rest for 5 minutes before serving.
Serve
Arrange on a board and serve with Scotch Bonnet chilli jam for dipping. Perfect with a glass of something festive!
