Ingredients (serves 2)
- 2 venison steaks
- 10 fresh cherries
- Rocket
- Fresh basil
- Mozzarella
- Balsamic vinegar
- 1 lemon
- Extra virgin olive oil
- Salt
Method
Prepare the cherries:
Halve and remove the stones from the cherries. Add them to a bowl with a small pinch of salt, a drizzle of balsamic vinegar, and a little olive oil. Set aside while you prepare the remaining ingredients.
Cook the venison:
Season the venison steaks with salt and a drizzle of olive oil. Sear in a hot pan until cooked to your liking. Remove from the heat and leave to rest for 5 minutes.
Dress the salad:
Place a handful of rocket into a bowl with a few torn basil leaves. Add a squeeze of lemon juice and a light drizzle of olive oil, then toss gently to combine.
Assemble:
Slice the rested venison and arrange over a serving plate. Season lightly with a little extra salt. Top with the dressed rocket, torn mozzarella, and the balsamic cherries. Finish with a final drizzle of olive oil before serving.
